Meatloaf is a wonderful thing! I don't know why some people dislike it so much!
My DH loves my meatloaf so much that if I want leftovers I have to make two at a time. (And I love meatloaf sandwiches, so I always want leftovers.) The funny thing is, I never make it the same way twice, I'm always experimenting-- though the base recipe is one I've used since I was ten years old.
It's great that you have learned to enjoy cooking for yourself. I find it sad when many of my customers will say "Oh, I like to cook, but it's too much trouble to cook just for me." I tell them "You have every right to eat good home cooked food as much as your guests!"
